
Canned Corn Fritters
A can of corn, flour, an egg, and garlic powder fried into golden, crispy fritters. Fifteen minutes, one skillet.

Drain the corn well and pat it dry with a clean towel. Excess moisture makes soggy fritters.

In a mixing bowl, combine the drained corn, flour, beaten egg, garlic powder, salt, and pepper. Stir until a thick batter forms. If it seems too wet, add another tablespoon of flour.

Heat the vegetable oil in a large skillet over medium-high heat. The oil is ready when a small drop of batter sizzles immediately.

Drop rounded tablespoons of batter into the hot oil, pressing gently to flatten into thick discs. Do not crowd the pan — work in batches.

Fry for 2-3 minutes per side until golden brown and crispy on the outside.
