Golden cornbread from pantry staples: cornmeal, flour, powdered milk, and an egg. A warm square of this alongside soup or beans is a complete meal.

Instructions

  1. 1

Preheat your oven to 400 degrees F (200 degrees C). Grease an 8x8-inch baking pan with a little oil.

  2. 2

In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, salt, and powdered milk.

  3. 3

In a smaller bowl, beat the egg, then add the water and vegetable oil. Stir to combine.

  4. 4

Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix. A few lumps are fine.

  5. 5

Pour the batter into the greased pan and spread it evenly.

  6. 6

Bake for 18-20 minutes, until the top is golden and a toothpick inserted in the center comes out clean.

  7. 7

Let it cool in the pan for 5 minutes before cutting into 9 squares.
