Crispy-edged Spam, day-old rice, soy sauce, and scrambled egg tossed together in a hot pan. A pantry-shelf classic.

Instructions

    Heat 1 tablespoon of the vegetable oil in a large skillet or wok over medium-high heat.

    Add the cubed Spam in a single layer. Let it cook undisturbed for 2-3 minutes until the bottom sides are crispy and golden. Stir and cook another 2 minutes until most sides are browned. Transfer to a plate.

    Add the remaining tablespoon of oil to the same pan. Pour in the beaten eggs and scramble them, breaking them into small pieces as they cook. Transfer to the plate with the Spam.

    With the pan still on high heat, add the cooked rice. Spread it out and let it sit against the hot pan for a minute without stirring — this is how you get those slightly crispy bits.

    Stir the rice and repeat: spread, wait, stir. Do this for 3-4 minutes.

    Drizzle the soy sauce over the rice and sprinkle with garlic powder and black pepper. Toss to combine.

    Return the Spam and scrambled eggs to the pan. Toss everything together for one more minute.

    Serve immediately in bowls.
