
Tomato Soup from Scratch
A pot of real tomato soup made from canned whole tomatoes, chicken broth, garlic, and olive oil. Better than anything from a can, and just as easy.

Heat the olive oil in a medium pot over medium heat.

Pour in the canned whole tomatoes with their juice. Use your hands or a fork to crush the tomatoes into rough pieces. Be careful of splashing.

Add the chicken broth, garlic powder, oregano, salt, and pepper.

Bring to a simmer and cook for 20 minutes, stirring occasionally.

For a smooth soup, use a potato masher or the back of a spoon to break down any remaining large pieces. If you have an immersion blender, even better, but it is not necessary.

Taste and adjust salt. Serve hot.
