
Corned Beef Hash and Eggs
A can of corned beef hash crisped up in a skillet and topped with fried eggs. Diner food at home in under ten minutes.
Ingredients
- •1 can (15 oz) corned beef hash
- •2 eggs
- •1 tbsp vegetable oil
- •Salt and black pepper to taste
- •Hot sauce to taste
Instructions

Heat the vegetable oil in a large skillet over medium heat.

Spoon the corned beef hash into the skillet and spread it into an even layer. Press it down with a spatula.

Let it cook undisturbed for 4–5 minutes until the bottom develops a golden-brown crust.

Flip the hash in sections and press down again. Cook another 3–4 minutes for more crust.

Push the hash to the sides of the pan and crack the eggs into the center. Season the eggs with salt and pepper.

Cover the pan and cook 2–3 minutes until the egg whites are set but the yolks are still runny (or cook longer if you prefer them firm).

Slide everything onto a plate. Hit it with hot sauce.
