
Depression-Era Water Pie
Flour, sugar, butter, and water turn into a custardy dessert in the oven. This Depression-era recipe should not work, but it does.

Ingredients
- •1 unbaked 9-inch pie crust
- •3 tbsp all-purpose flour
- •3/4 cup granulated sugar
- •3 tbsp butter, cut into small pieces
- •1 tsp vanilla extract
- •2 cups cold water

Preheat your oven to 400 degrees F (200 degrees C).

Place the pie crust in a 9-inch pie dish and crimp the edges.

In a small bowl, whisk together the flour and sugar. Sprinkle this mixture evenly across the bottom of the pie crust.

Scatter the butter pieces over the flour-sugar mixture.

Drizzle the vanilla extract over everything.

Slowly pour the cold water into the pie crust. Do not stir — let the layers sit as they are.

Carefully transfer to the oven and bake for 30 minutes at 400 degrees F.

Reduce heat to 375 degrees F (190 degrees C) and bake for another 25-30 minutes until the top is golden and the center is just barely set. It will jiggle slightly.

Cool on a wire rack for at least 2 hours. The filling firms up as it cools.
