Day-old rice fried with garlic powder, soy sauce, and a scrambled egg. The most practical leftover transformation in any kitchen.

    Heat the vegetable oil in a large skillet or wok over high heat until it shimmers.

    Crack the egg into the pan and scramble it quickly, breaking it into small pieces. This takes about 30 seconds.

    Add the cold rice to the pan. Spread it out and press it flat against the surface. Let it sit without stirring for 1–2 minutes to get some color on the bottom.

    Stir the rice, breaking up any clumps, and press flat again. Repeat 2–3 times over about 5 minutes total.

    Sprinkle the garlic powder over the rice and stir to distribute.

    Drizzle the soy sauce around the edges of the pan (not directly on the rice) so it hits the hot surface and sizzles before mixing in. Stir to combine.

    Taste and add salt if needed. The soy sauce may be enough.
