
Pinto Bean Quesadillas
Mashed pinto beans, melted cheese, and a crack of hot sauce folded into a crispy tortilla. Ten minutes, no complaints.
Ingredients
- •1 can (15 oz) pinto beans, drained and rinsed
- •4 flour tortillas (8-inch)
- •1 cup shredded cheese
- •1 tbsp hot sauce
- •1/2 tsp garlic powder
- •1 tbsp vegetable oil
- •Salt to taste

Drain and rinse the pinto beans. Put them in a bowl and mash with a fork until mostly smooth — some chunks are fine.

Stir in the hot sauce, garlic powder, and a pinch of salt.

Spread the bean mixture across one half of each tortilla. Top with shredded cheese and fold in half.

Heat a large skillet over medium heat with a thin layer of oil.

Cook each quesadilla for 2-3 minutes per side, pressing gently with a spatula, until the tortilla is golden and the cheese is melted.

Slice into wedges and serve hot.
