
Hot Cornmeal Porridge
Cornmeal, water, powdered milk, and maple syrup — a hot, creamy porridge that has been fueling mornings around the world under a dozen different names.
Ingredients
- •1/2 cup cornmeal
- •2 cups water
- •2 tbsp powdered milk
- •2 tbsp maple syrup
- •Pinch of salt
Instructions

Bring 2 cups of water to a boil in a small saucepan. Add a pinch of salt.

Slowly pour in the cornmeal while stirring constantly. This is the step that prevents lumps — do not dump it all in at once.

Reduce heat to low and continue stirring for 5–7 minutes until the porridge is thick and smooth and pulls away from the sides of the pot slightly.

Remove from heat. Stir in the powdered milk and maple syrup until fully incorporated.

Serve immediately. It thickens as it cools.
