
Pasta with Garlic Oil
Spaghetti tossed with warm olive oil, garlic powder, and a touch of heat. The Italian pantry staple known as aglio e olio, adapted for the shelf.
Ingredients
- •8 oz spaghetti
- •3 tbsp olive oil
- •1 tsp garlic powder
- •1/4 tsp red pepper flakes
- •1/2 tsp salt
- •1/4 tsp black pepper

Bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente. Before draining, scoop out 1/2 cup of the starchy pasta water and set it aside.

While the pasta cooks, heat the olive oil in a large skillet over medium-low heat. Add the garlic powder and red pepper flakes. Stir and cook for about 1 minute. Do not let the garlic powder burn. You want it fragrant, not dark.

Drain the pasta and add it directly to the skillet with the garlic oil.

Toss the pasta in the oil, adding a splash of the reserved pasta water to help the sauce coat the noodles. The starchy water is what makes it glossy and cohesive.

Season with salt and pepper. Toss again and serve immediately.
