
Honey Cornbread Muffins
Golden cornbread muffins sweetened with honey and made with powdered milk. Sturdy, tender, and made to sit next to a bowl of soup or chili.

Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.

In a large bowl, whisk together the cornmeal, flour, powdered milk, baking powder, and salt.

In a separate bowl, beat the egg, then stir in the water, vegetable oil, and honey.

Pour the wet ingredients into the dry ingredients and stir until just combined. A few small lumps are fine — do not overmix or the muffins will be tough.

Divide the batter evenly among the 12 muffin cups.

Bake for 15–18 minutes until the tops are golden and a toothpick inserted in the center comes out clean.

Let cool in the pan for 5 minutes, then turn out onto a wire rack.
