
Sardine Salad
Sardines mashed with pickle relish and garlic, served on crackers. A Mediterranean-inspired spread made from the pantry shelf in five minutes.
Ingredients
- •2 cans sardines, drained
- •2 tbsp pickle relish
- •1 tsp olive oil
- •1/2 tsp garlic powder
- •1/4 tsp black pepper
- •16 saltine crackers or 8 Ritz crackers
Instructions

Drain the sardines and place them in a medium bowl.

Mash them thoroughly with a fork until you have a rough paste. Some small chunks are fine — you are not making baby food.

Add the pickle relish, olive oil, garlic powder, and black pepper. Stir everything together until well combined.

Taste and adjust seasoning. You probably do not need salt — the sardines and relish are both salty.

Serve scooped onto crackers. Eat immediately or chill for 30 minutes for a firmer spread.
